Baingan/Brinjal/Badane Raitha

This dish goes well with plain rice. Usually this is prepared to be in semi liquid state but you can add more water/curd if you prefer.

1. Cooked Brinjal
2. Brinjal Raitha
Ingredients
Round green Brinjal - 2
Onion - 1 big size
Green chilly - 2 to 3 (vary according to taste)
Chopped Coriander leaves - 3 big spoons
Oil - 2 spoons
Mustard - 1 spoon
Bengal gram - 1 spoon
Fresh curd - 1 cup
Water - 1 1/2 cup
Salt

Method
1. Cook the Brinjals as whole without cutting it as shown in picture 1.

2. Mash the cooked Brinjals finely, add raw chopped onion, chopped green chilly, chopped coriander leaves, Salt, curd and water. Mix well.

3. In a pan, put bengal gram into heated oil. When color changes, add mustard. When it splutters, put this upon mashed mixture of Brinjal and mix well.

Brinjal Raitha is ready to eat !!!!
