White rice - 2 cups
Urad dal - 1/2 cup
Beaten rice/poha/avalakki - 1/4 cup
Salt
Water - 2 to 2 1/2 cups
Method
1. Wash rice and urad dal together and soak it using 1 1/2 cup of water for about 4 hours. Soak beaten rice separately using 1/2 cup of water.
2. After 4 hours, do not drain water from soaked items. Put all together in a mixer grinder and grind it to fine paste using 1/2 to 3/4 cup of extra water.
3. Keep aside ground batter for about 7 to 8 hours so that it gets fermented.
4. After fermentation, add salt to taste and mix well. Now Dosa batter is ready.
5. Now take a small scoop of batter and put it on heated tawa.
6. Spread batter on tawa using scoop as shown in picture 1 and picture 2. Cover the pan with a lid.
7. Take out the lid after a second, so that it is half roasted at the bottom. Now put a spoon of ghee/butter/oil on top of it and do not cover the pan. Once the bottom of dosa is roasted to honey color, take it out from the pan.
Dosa ready !!! Have it with Chutney/Sambar.
