Veg Palak

It is a very healthy dish and can be prepared using Fenugreek / Methi leaves also.


Ingredients
Palak / Spinach leaves - a bunch consisting of 20 to 25 leaves
Onion - 1
Tomato - 1
French Beans - 10 to 15
Aloo / Potato - 1
Toor dal / Split Pigeon Pea / Thogari bele - 3 spoon
Oil - 3 to 4 spoons
Mustard - 1 spoon
Garam masala powder - 1/2 spoon
Red chilly powder - 1/2 spoon
Salt

Method
1. Soak Toor dal in water for about an hour.

2. Cut Beans into 1/2 inch piece and Potato into small pieces. Cook together with little Salt and soaked Toor dal and keep aside.

3. Put mustard seeds into heated oil in a kadai. When splutters, add chopped Onion and Tomato and fry.

4. When Onion and Tomato are half cooked, add chopped Spinach / Palak, Red chilly powder and little Salt.

( Note: Palak leaves themselves contain bit salt taste. So be careful while adding salt.)


5. Mix well, do not add water. Fry until Palak is cooked.

6. Now add cooked Beans, Aloo and Dal mixture into cooked Palak and mix well. Put Garam masala powder, fry for a second.

Thats it !!! Veg Palak Ready to be served with either plain rice or Chapati.
