I learnt this recipe from my mother and ofcourse it is my favourite :-) . Can prepare the same using Okra/ Bhendi and unripened Banana.
The ingredients are same as preparation of Coconut chutney - extra ingredient is Coriander leaves and Fried grams. So you can prepare it using left over chutney also.
Ingredients
Long green Brinjal - 6
Coconut - 1/4 part
Fried gram / Hurigadale - 1 spoon
Coriander leaves - 5 to 6 stems
Green chilly - 2 to 3 ( Vary as per taste)
Tamarind slice - 1/2 inch
Salt
Sugar - a pinch
Mustard seeds - 2 spoon
Oil - 1/4 cup
Note: If you do not want to that much of oil, can cook Brinjal in water itself. In that case, use 2 spoons of oil.
Method
1. Put mustard seeds into 1/4 cup of heated oil. When it splutters, add chopped Brinjal and Salt. Keep on sauteing till Brinjal cooks.
OR
Heat 2 spoons of oil, add mustard. Once it splutters, add chopped Brinjal, Salt and 1 to 2 cups of water and cover the lid. Stir occasionally. Once cooked keep it aside.
Now lets prepare gravy for it....
1. Grind grated Coconut, Coriander leaves, Tamarind, Green chilly, Sugar, Fried gram together to fine paste using sufficient water.
2. Put this ground paste/ Gravy into cooked Brinjal and heat it till it boils.
Gojju is ready !!!..It tastes delicious with plain rice / Chapathi.
