Pudina (Mint ) rice or Pudinabath can be made two ways. I have presented the first version here.

Onion - 2
Tomato - 2
Chopped Mint (Pudina ) leaves - 2 bowls
Green chilly - 2 ( Can vary according to taste)
Turmeric - a pinch
Salt - ( Can vary according to taste)
Cooked rice - 4 bowls
Oil - 4 tablespoon
Mustard seeds - 1 tablespoon
Method:

1. Heat oil in a pan and add mustard seeds. When it starts popping up, add chopped onion (sideways), chopped tomato and chopped chilly. After frying it for a minute add Mint leaves and stir it.
2. The above mixture is done when Mint leaves color turns almost black. Then sprinkle a pinch of turmeric and add salt. Mix it well
3. Now add cooked rice and mix it well
Mintrice is ready to serve.
