This stir fry is usually prepared in Mangalore region of karnataka. Colored cucumber is also known as Mangalooru Southe kaayi in Karnataka. Since this type of Cucumber is bit tangy in taste, we add bit of jaggery. So it turns out a tangy sweety and hot stir fry.
Ingredients
Half part of coloured Cucumber
Grated Coconut - 2 to 3 spoons
Turmeric - a pinch
Salt
Red chillies - 2
Curry leaves - 4 t o5
Split black gram dal / Urad dal - 1 spoon
Jaggery - size of an almond
Method
1. Wash and chop the Cucumber as shown in picture 1.
2. In a vessel, put chopped Cucumber, cover the lid and allow it to cook in small flame. (Water is not required as Cucumber itself has water content in it.)
3. When half cooked, add turmeric, jaggery, grated Coconut and Salt. Mix well and cover the lid again. If water content is completely dried out, you can add 3 to 4 table spoons of water.
4. Once it is cooked, season it. For seasoning, heat 2 tea spoons of oil in a pan. Add mustard seeds. Once it splutters, add urad dal. When urad dal is about to change the colour, add red chilly pieces and curry leaves. Finally put it over cooked Cucumber.
5. Mix well and cover the lid for half a second and switch off the flame.
Southe palya is ready, You can savour it with hot rice.
