Ingredients
Cooked rice - 4 to 5 cups
Ground nuts - 1/4 cup
Oil - 2 t o 3 spoon
Lemon juice - 2 large spoon
Green chilly - 2 to 3 (depending on taste)
Salt
Sugar - 1/4 spoon
Turmeric - 1/4 spoon
Onion - 1 big
Grated Coconut - 1/4 cup ( Optional)
Chopped Coriander leaves - 1/4 cup
Method
1. Heat oil in a pan, fry ground nuts until it changes the color slightly.
2. Add mustard seeds and turmeric. When it splutters, add chopped green chilly and chopped onion and fry. When Onion is cooked, add grated coconut (optional) and fry for two seconds.
3. Turn off the flame, let it cool down a bit. Then add salt, sugar, chopped coriander leaves and lemon juice as shown in picture 1.
4. Now add cooked rice and mix well as shown in picture 2.
Lemon rice is ready to serve.!!!
