What do you do with the ridges of ridge gourd once you peel it off?? Throw it away?? WAIT; don't do that. I have a recipe for you with the peeled off ridges of ridge gourd - Ridgegourd chutney.

Ingredients
==================
Peeled ridges of 2 Ridge gourd
Grated Coconut - half of halved coconut part.
Coriander seeds - 3 tablespoon
Red chilly - 2
Garlic - 2
Oil - 2 tablespoon
Salt
Tamarind - about an inch
Method
======================
1. Put ridges, coriander seeds, red chilly, tamarind and salt in a bowl and cook it well.
2. Once it cools, add grated coconut and grind it to a paste.
3. Heat oil in a pan; add garlic cloves and fry it till it turns to brown.
4. Put fried garlic cloves above the ridge paste and mix it well before you serve.
The delicious chutney is ready..
