When you want to prepare sambar, it is very cumbersome to roast spices and grind each time. Instead, you can prepare sambar powder and store, so that instantly you can use this powder along with Coconut to prepare sambar gravy.
I am presenting South canara (Karnataka) style of preparing Sambar powder. I have learnt it from my mother. You can store this powder for many months in an airtight container. See Sambar to know how to prepare sambar using this powder.
Ingredients
=============
Dried red chilly - 1/4 Kg
Coriander seeds (Dhania) - 1/4 Kg
Urad dal - 1/4 Kg
Raw rice or Bengal gram - 1 fist
Jeera - 100 g
Fenugreek seeds - 25 g
Asafoetida - 1 big spoon
Method
=================
1. Dry roast all the items separately except asafoetida until you get nice aroma and keep aside.
2. When it cools down, put all together in a mixer and grind it to get fine powder.
3. Put asafoetida and mix the powder well.
Sambar powder is ready to use !!!!
