Upma or Uppittu is served in every hotel/restaurant of India whether it is road side or five-star. The very origin recipe of Upma does not contain vegetables. Putting vegetabls is the varied version of Upma which I like very much.
While choosing Semolina for Upma, choose semolina which is of medium coarse. Do not choose the one which has got big size or very fine size.
Ingredients

Rava/Semolina - 1 cup
Water - 2 1/2 cup
Chopped beans - 1 cup
Chopped Tomato - 1 cup
Chopped Potato - 1 cup
Chopped Carrot - 1 cup
Onion - 2
Green chilly - 1 to 2
Oil - 5 large spoon
Mustard - 1 spoon
Bengal gram - 2 spoon
salt
Coriander leaves
Method
=============
1. Roast Rava until fine aroma is felt and Rava color is changed a bit as shown in the picture.
2. Cook all vegetables except Onion and Tomato together and keep aside.
3. Boil water and keep aside.
4. In a pan, heat oil and bengal grams. When color changed, add mustard seeds. When it splutters, add onion and fry for a minute.
5. Now add, tomatoes and chopped green chilly. Fry for a minute.
6. Add roasted Rava to the above and fry for 5 minutes.
7. Add cooked vegetables and salt as shown in 3rd picture.
8. Now add hot water to the above said mixture little by little. Cook it in small flame.
Sprinkle chopped coriander leaves on top of it. Mix well and serve hot !!!
